What's not to love about these delicious, moist, and healthy, oat muffins? I added a handful of nuts, shave coconuts, and raisins to my batter. Good thing is you can make them ahead, freeze them, and pop them in the microwave for a quick breakfast or snack anytime. You can also add your favourite dried fruits or nuts, and you can substitute sugar with honey instead.
Ingredients
1 Cup Oats
1 Cup Buttermilk
1 Cup Flour
1/2 Cup Raisins
1/2 Cup Shaved Coconut
1/4 Cup sugar
1/3 Cup Coconut Oil
1 Egg (large)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Method
- Preheat oven to 220 degrees C , and grease 12 muffin tins.
- In a large bowl, combine oats and buttermilk, set aside. In another bowl mix together the flour, baking powder, baking soda, raisins, sugar, and shaved coconut.
- Mix the coconut oil and egg in another bowl, then add the buttermilk mixture. Mix well, then add the dry ingredients. Stir until combined, and spoon into greased muffin tins.
- Bake in preheated oven for 20-25minutes. Serve warm!
